Moroccan Chicken

I’ll be the first to admit that my cooking skills are lacking.  I am not the Pioneer Woman.  I don’t have the desire, time, or skill to make something out of nothing.  So, I’m always on the lookout for easy recipes.

When my friend, Bethany, recently raved about a Moroccan Chicken recipe, I knew I had to check it out.

The list of ingredients is short, so you won’t go broke trying to feed this meal to your family.

I used one package of boneless, skinless chicken breasts, which I thinned by filleting them.  (Can you fillet chicken?  Sure you can!).  I also used a small jar of whole olives.  I wanted the Mr. to be able to pick them out if he wanted.

I made the recipe exactly as the directions instructed.

At first, I was a little worried.  The cinnamon smelled a little strong!  However, the spices cooked down and blended together in a very different, aromatic way.

After pulling the chicken out of the pan, I needed to thicken the gravy.  Again, I was concerned and considered adding some cream of tartar.  However, I followed the instructions, boiling it for the required time (after adding the additional ingredients the recipe called for) and lo and behold…it thickened!

I fixed Jasmine rice, and we were ready to roll.

Let me tell you…what a pleasant surprise!  The flavors were not something we were used to, but it was wonderfully different!  The Mr., who had raised his eyebrows in doubt when he asked what we were having for dinner, admitted that it wasn’t that bad.  It couldn’t have been worse than the Rice Lasagna or Fried Spaghetti I’ve cooked recently.

Coupon Categories

Coupon Queen paid me the ultimate compliment.

She told me that she likes my coupon binder and asked me to provide a list of the categories I came up with.  You see, she’s going to make one for herself!

I thought I would go ahead and post these here, in case anyone else can use them.

Before I list them, let me suggest something to you (something I wish I’d thought of before setting up my binder).  Keep all of your category letters separate.  By that, I mean, keep the A’s together.  If you have open slots at the end, don’t automatically start with the B’s.  Just leave them in case you need to add more A’s later.

When making my binder, I accidentally left out a few categories, and rather than moving my labels around (I’m anal in this way), I stuck the new categories at the end of my binder.  It’s going to drive me nuts, I know, and I might eventually go back and slip them in.

What Possessed You?

Those were the Mr.’s words last night as he tasted dinner…

Rice Lasagna

We had Rice Lasagna.  The gal who posted the recipe gave it rave reviews.

I had to substitute cheddar cheese for the mozzarella.  I think that would have made a little bit of a difference in the taste.

However, the Mr. was not impressed.

The Mr. is a creature of habit, preferring to eat the things he knows he likes…spaghetti, cubed steak, roast…that sort of thing.

I either have gutter taste buds, or it actually tasted good, because I liked it!  Sure, the texture was a little different.  There’s nothing quite like the smooth, flat feel of a lasagna noodle.

But, the dish was hearty.  I made the mistake of going for seconds, which hit my stomach like a gut bomb 15 minutes later.

With my new shopping, we’ve had to be flexible.  Eating in my house is a bit like white water rafting.  You never know what’s around the bend.

Time to Organize the Coupons

You know I have been enjoying my couponing.  The only thing I haven’t enjoyed is hunting for coupons.

Oh, not the coupons that are in the supplements each week.  These are kept in folders.

The coupons I’m referring to are the ones I print from the internet, peelies (the ones stuck to items on the shelves), and the ones that Queen Couponer (my mother-in-law) sends me.

I can’t tell you the amount of time I’ve spent over the last few weeks…hunting for particular coupons.

Oy!

So, I enlisted Chicky’s help…well…make that “bribed” her to help.

She was in charge of cutting each coupon out while I made the binder.  As she cut them, she organized them into categories…

That’s a whole lotta coupons, eh?  Can you imagine going through them one by one to find something in particular?

The day before we worked on this project, Chicky and I had gone to Hobby Lobby, armed with a 40% coupon, where I purchased a package of plastic baseball card pages.

I found file labels in my closet and wrote the names of different categories on them…two per label (one on the left and one on the right side of each label).  I used my paper cutter to cut a straight line through the middle of them.

I tried my best to alphabetize the categories, and I did a fairly decent job of it.

My original intent was to use all nine slots on each page; however, it didn’t take me long to realize that many of my coupons are long, and some of my coupons would be hidden, so I had to come up with another plan.

I decided to place labels at the tops and bottoms of each page.  I placed the coupons for the top labels in the middle slots.  This allows me to see their category names.  The bottom labels correspond with coupons placed in the bottom-most slots.  The coupons cover the middle slots, but it doesn’t really bother me because I can see those labels, which are at the very top of each page.

Another thing I discovered…you can only use one side of these pages!  Thankfully, my package came with a lot of pages, so I have plenty left over.

I added four new categories towards the end of this project, so I just stuck them on the last page.  It bugs me a little that they aren’t in alphabetical order, but oh well.  I was not about to shift the labels and coupons.

All-in-all, this was at least a two-hour job.  I just know the time will have been worth it the next time I plan a big shopping trip.

Bonding With Chicky

You might remember me telling you that Guy Friend left for college.

Chicky has had a very hard time adjusting.  Even though they have been apart for a week before, her brain knows this is different.

When you’re the mom, what do you do?

First, you tread carefully.  The ground is not solid, and you never know when there will be an explosion of tears or angry words.

The last few days have, surprisingly, provided an opportunity for Chicky and me to bond.

We all know about girls and their relationships with their moms.  The men in the house steer clear because they never know when the fireworks are going to begin.

However, since Thursday, Chicky has done an unusual thing.

She’s asked for advice.

And she’s asked me what I’m doing, and if she can tag along.

And she’s asked if she can sleep in my bed.

My tears are flowing as I type this.

It has been a long few years for us.  Many, many hurtful things have flown between us.

Typical, I’ve heard, but painful none the less.

God is so good, though.  Not that I ever doubted this.  However, when you’re in the midst of the storm, it’s hard to remember that there’s a rainbow at the end.

God promises us that He uses everything for His glory.

How true!

So many times in the battles with Chicky, I’ve been tempted to throw up my hands in defeat and give up.  But I never could.  I know that I have a responsibility to God to be there for her.

I think that my steadfastness has shown her that I’m here for her through thick and thin.

I know that we’ll continue to butt heads.  This is a big year for her with it being her senior year.

My hope is that she’ll be able to look back, remember this season, and know that I’m always here for her…willing and able to love her through whatever life throws at her.

Time for a Scavenger Hunt!

I had an awesome day!

This is Youth Week at church.  To kick things off properly, the youth got together this afternoon for its annual Scavenger Hunt.

I offered my services as a parent driver.

Naturally, my own children did not accompany me.  Oh no.  That would have been way un-cool.

So, I walked around the youth room for a few minutes, feeling a little like the last kid picked on a team.

Then, four younger girls approached me.  Would I be willing to drive them?

Of course I would!!!

Chicky looked over at them and apologized in advance for me.

I almost apologized, in advance, for beating her in this game.

You see, I like to do things hard-core…be it couponing, exercising, or knitting.

Ready, set, go!

We were off…all 20 groups of us…armed with our lists and cameras.  We had three and a half hours.  Plenty of time.

It felt a little like The Amazing Race.  I was psyched as the adrenaline began to flow.

The rules:

  • The driver had to take all of the pictures.  All pictures had to include every youth member in the vehicle.
  • Showing up late would result in a loss of points.

Not a lot of rules, you see.

As we started driving, we quickly found a church.  We scored 50 points for each church, and additional points per denomination.

Folks, I live in the South…i.e. The Bible Belt.  You can’t go very far in this town without stumbling upon a church.

We found two before heading to my house, where I’d left my cell phone.  We were able to take several of the required pictures at my house.

Yeah, they had to stick their faces in the pool at once.  The sunbathers sitting nearby had a good laugh.  So did the girls.  It was actually a relief because it was so hot this afternoon!

Our tasks included the following:

  • Spelling out a word in front of a local restaurant.  My girls spelled LOVE.
  • Forming a bulls-eye in front of Target.  The customers coming out had a good laugh at us.
  • Finding an out-of-state license plate.  We scored this at Target.
  • Posing as animals in front of a pet store.
  • Eating ice cream from one cup in front of a local ice cream shop.  The girls LOVED this one!
  • Fishing with separate poles.  Extra points were scored for being in a boat, away from the shore or the dock.  We made a new friend (a stranger) who kindly took the girls out.  They were a little weirded out by this.
  • Posing in a VW (old model).  I don’t know if we got away with this one.  The girls got in a newer one…a neighbor’s.  Again, we made a new friend when we knocked on his door.
  • Finding a 60+ male member of the church and pose while he read his favorite Bible verse.  One of my girl’s fathers fit the description, and we scored 100 points.

There were a few more things on the list, but I can’t remember them all.

I have no idea if we won.  I left the church after dropping the girls off and getting my pictures transferred to a church computer.

As one of the girls said in the car, “It’s not about winning but about having fun.”

I would say she got it right.  We laughed so much.  I got a good amount of exercise by jumping in and out of the car and running to catch up with kids over 20 years younger than me.

I came home on a high.  What a wonderful day!

Guy Friend Leaves for College

It’s a sad day…Guy Friend is leaving for college today.

Chicky is, to put it mildly, quite upset.

He’s been a part of our extended family for a year now, and it will seem a lot quieter in the house now.

He is the kind of guy who brings a room to life.  His energy (a bit ADD) and boyish smile can make even the grumpiest of people (not me, of course) happy.

He’ll be attending a Christian college where he’ll also play soccer for the school.

Guy Friend was at the house last night, but I was sick and unable to say goodbye to him.  Instead, I drove to his house today and gave him a big hug.  I also told him that I will be praying for him.

Sigh…

It feels like one of my own children is leaving.
